Curry Vegetable Dip

3 T + 1 t vinegar  
1 ½ t cornstarch
2 T sugar
½ t paprika
½ t garlic powder
¼  t mustard powder
1 c mayonnaise
  • Mix vinegar and cornstarch and stir together.
  • Whisk in sugar, paprika, garlic powder, and mustard powders
  • Heat on medium-high, stirring constantly, until it reaches a full rolling boil
  • Remove from heat and stir well. It will thicken as it cools
  • Whisk in mayonnaise until smooth
1 T curry powder 
1 t onion powder
¼ garlic powder
1 t kosher salt
1 T vinegar 
1 t horseradish sauce
  • Add remaining ingredients and mix well
  • Chill before serving

Hot Pepper Peach Spread

This is a yummy cracker dip that I made over the holidays and again for the Superbowl. It's creamy, sweet and spicy.


Hot Pepper Peach Spread
-Deanna Wells
1 (8-oz) package cream cheese, softened
3-5 oz Rothschild Hot Pepper Peach Jelly (I used Rise & Roll's Peach Jalapeno Jam)
1 1/2 teaspoons dried minced onion
1 1/2 teaspoons red pepper flakes
1 1/2 teaspoons dried parsley flakes
1/2 teaspoon paprika
Monterrey Jack Cheese, shredded

Mix all ingredients together except the Monterrey Jack cheese. Spread in a shallow dish and top with shredded cheese. Refrigerate at least one hour. Serve with crackers.

Cheddar Bacon Dip

Try this. It's so good and so easy.
 I'd love to say that I adapted it...but I didn't. It's good the way it is.

Cheddar Bacon Dip

16 oz sour cream
1 packet Ranch dressing mix
3 oz Bacon Bits (the kind in the bag, not the jar)
1 cup sharp cheddar cheese, shredded

Mix together and refrigerate for 24 hours.  Serve with crackers, chips or veggies.

Nachos

There is something gratifying about being able to throw dinner together without having to go to the store. (Especially since I don't plan out the week's meals in advance).
Tonight we made nachos. First we fried the chips...


Then add the fixings, and bake.


Not healthy, but they were yummy. And good Olympics-watching food. OK, that was the plan, but the Olympics weren't on when we ate. We watched a lame episode of America's Funniest Home Videos. Is it just me, or are the videos not as funny as they used to be? Maybe it was just a bum episode. That is one show that is usually guaranteed to give me a good belly laugh...Maybe next time.
